| SIMPLE BROWN BREAD Mother made this bread and served it with homemade baked beans. On the days as a volunteer attending a Florence Crittenden meeting or going to one of her many clubs (get-togethers with friends from elementary school who sewed, played canasta, chatted) in the afternoon, she served an easy dinner of canned beans (with added sugar, catsup, onions) on toast. When she had time, she made this brown bread that, of course, was totally eaten at the meal. There were seven of us (one sister and three brothers) in the family, and at one time—when Mom cooked for Grandma and Grandpa Wilkins—nine happy eaters. 1 cup BROWN SUGAR 2 T BUTTER 1 cup HOT WATER 2-1/4 cups FLOUR 1 EGG 1/2 t BAKING POWDER 1 t BAKING SODA Mix all. Put in a 9x5-inch loaf pan. Bake slowly for 1 hour at either 300 or 325 degrees. When this brown bread comes out of the oven, you might be tempted to pat the top of the warm, sweet-smelling, and delicious bread—just as my sister Nan used to do with all her baked treasures that came out of her oven. Pat, pat, pat. The patting seemed to reassure her that it was just right to serve. Her personal seal of approval. |
